I want to be able to display a Deposit as a percentage of the Estimate total. Can I use dynamic text to calculate 30% of the Total and then display it as a value?

any pointers?

You can either use a script or use the "Evaluate entire text as mathematical expression" located on the right side of the window when editing a dynamic text area. So using the evaluate text as a mathematical expression you'll have something like this:

("estimate total token") * 0.30
