Where is the option to show slip start & end dates in the application window? Due date alone doesn't seem too useful when trying to cross-check multiple days' consultancy.

... or have I missed a trick here?

I agree. Due date is useless. I'd like to be able to add or delete any column header I want.

So, does this mean that there is no menu option to show these existing slip fields? That seems somewhat bizarre.

I can understand the reluctance to add custom fields (which I'd also like) but hiding existing fields that you'd use for every slip for some business types seems downright strange - it's not like we lack screen real-estate?!?

There appears to be no way to show those headers. And yes, it is bizarre. Almost as bizarre as not being able to sort invoices by invoice number.
