Is there a way to have an estimate carry over into a project? I would like to be able to delete an opportunity once it is won and turned into a project, but the estimate doesn't carry over once I create the project?

As for a method to keep the estimate, save the estimate as a PDF and link it to the contact. This way the information comes over with the contact.

There are two concepts I can think of. What would you prefer to see, a prominent link back to the original opportunity or simply bringing over all linked information?
