Does anyone know a way to send an invoice to multiple emails?
When I bill there are 3 people who get the invoice,
and it would be nice if I didn't have to add them
manually. Also, since we're talking about email options,
can you set up a default subject line for the email?

Invoice to multiple recipients

No, is the simple answer. The easiest way is to 'Send invoice' open in mail and then add the other two recipients from the Daylite Address Pannel in mail, Apple + >.

Not that I'm aware of. A work around would be to create a widget with a formatted mailto link but this wouldn't work with multiple or merge.
